Utappa with Leftover Raita

Yesterday, I had a get together at my home and I made lot of food which also

included Raita too. When we had all the fun and as they were departing, I was

packing the leftover food. I had lots of Raita left over.

I was going to throw this raita to clean the bowl as you know it won’t be

good for the next day. That is when my friend Aruna Yerramalla told me you

can make Uthappa with this left over Raita. I asked her how? That is how I got

this recipe and when I made them, they came out good.

I learned not to throw away the left over Raita, but make yummy Utappa.

Try it out… you will like it.

Also note that this is a healthy snack too.

Ingredients:

  • Raita – 2 Cups
  • Rice Flour – 1.5 Cups
  • Salt – to taste
  • Oil – to make Uthappams

Method:

  1. In the raita, mix the rice flour and salt and let it ferment for 5 to 6 hours.
  2. Take a skillet and put little oil and put 1/4 cup of mix and spread it like pan cakes and put some oil around the uthappa and let it cook.
  3. After few minutes flip it other side and cook.
  4. Take this in a plate and serve this with any chutney.

Handvo

 

This is a Gujarati Dish. I got this recipe from my friend Aruna Yeramalla. 

I loved it so much that I asked my friend for the recipe and procedure. As she lives in the same neighbourhood, she stopped by my home to show me how to make this. Thank you Aruna for sharing your recipe and secrets in making this wonderful dish.

My Family had fun & enjoyed the Handvo.I am sure I am  going to make it again and again.

This is a 2 Day & 3 step Procedure. So please review it thoroughly before start making this recipe and also please follow the steps.

Day # 1:

Step # 1:

Mix all the following ingredients and let it ferment overnight.

Ingredients:

  • Handvo Flour – 2 Cups
  • Salt – to taste
  • Curd – 1/2 Cup
  • Oil – 3 Table Spoons
  • Warm Water – as needed to mix the flour
  • Eno Fruit salt – lemon flavoured – 1 Teaspoon

*** Mix all the above in a bowl and let it ferment overnight. ***

Day # 2:

Step # 2:

Following are the ingredients needed to make Handvo besides the ferment batter.

  • Sora Kaya(సొరకాయ) – 4 inch pieces – Grated
  • Carrot – 1 big – grated
  • Ginger-garlic Paste – 1 Teaspoon
  • Green Chillies Paste – 1 Teaspoon
  • Cilantro – Handful – Cut into tiny Pieces.
  • Baking Soda – 1 Teaspoon
  • Eno Fruit Salt – 1/2 Teaspoon.

Step # 3:

The following ingredients are for Tadka(తిరగమాత) to go with Handvo before it goes into Oven for Baking.

  • Mustard Seeds – 1/2 Teaspoon
  • Sesame Seeds – 1 Teaspoon
  • Dry Red Chillies – 6 Cut into Half
  • Oil – 3 Tablespoon

Method:

  1. Preheat the oven to 400 degrees
  2. Grease the Baking pan with oil.
  3. From step # 2, take all the ingredients and mix them well with the fermented  Handvo batter from the previous night(Step #1) . Pour this mix into the greased baking pan and keep it aside.
  4. Take a small pan and put 3 tablespoons of oil and bring it to heat. Put the tadka using ingredients from step#2(Mustard Seeds, Dry Red Chillies). Once these crackle, put this stuff over Handvo  in the Baking Pan evenly. Also sprinkle Sesame Seeds over this.
  5. Now bake this for 30 minutes. Check the Pan. Handvo should look brown at this point. If it does not, leave it in the oven and bake it for another 4 minutes.
  6. Once it is done, Take the pan out of the oven and let it sit on a counter top for 30-60 minutes to cool off. Once it is cool, you can cut Handvo into pieces for serving.

Sounds like too much work, but you will enjoy the final out come.

You can serve this with Green Chillies Chutney, Mint Chutney or Ketchup.

Tip: Remember to layer the batter in Baking pan of size 13X9  to get the best Handvo.  

Also, I will be trying this Handvo with other traditional ingredients and I will keep you posted with the results.

Veggie Manchurian

Veggi Manchurian

I got this recipe from my friend Shirisha Putnala. I tried this at home and it turned out awesome.

I am sure you are going to like it too.

This has two parts. In part-1, we prepare and deep fry the Manchurian Balls.

Then in Part-2, we make the sauce to add it to these Manchurian Balls.

Part-1: Preparing Manchurian Balls

Ingredients:

  • Carrot – 1 Cup – Shredded
  • Cabbage – 1 Cup – Shredded
  • Heat the above two items in a Microwave for 2 minutes
  • Green Chili Paste – 1 Tea Spoon
  • Ginger Garlic Paste – 1/2 Tea Spoon
  • Ajinomoto – 1 Table Spoon
  • Maida – 1.5 Table spoon
  • Bread Crumbs – 1 Table Spoon
  • Salt to taste
  • Oil for Deep Fry

Method:

  1. Mix all the above ingredients and make small balls and then Deep fry them until they are golden Brown.

Part-2: Preperaing  Sauce for the Manchurian Balls.

Ingredients:

  • Onion – 1/2 – Cut it into small pieces
  • Tomato Ketchup – 1 Tea Spoon
  • Soy Sauce – 1 Tea Spoon
  • Green Chili Sauce – 1 Tea Spoon
  • Ajinomoto – 1/8 Tea Spoon
  • Oil – 2 Table spoons
  • Salt – Pinch

Method:

  1. In a frying pan, put 2 table spoons of oil. Fry the onion and then put the remaining ingredients and saute them for a minute.
  2. Toss the Fried Manchurian Balls that you made in part 1  into this Sauce.
  3. Garnish this with finely chopped Cilantro and spring onions.

Your Manchurian is Ready & it is munching time… Enjoy!!!

I got this recipe from my Friend Bharathi Udayagiri.

Ma Ta Da

Ingredients:

  • Goruchikkudu Kayalu – 1 lb cut into small pieces
  • Toor Dal – 1/2 Cup – Soak it for 2 hours
  • Chana Dal – 1 /2 Cup – Soak it for 2 hours
  • Tadka Seeds – 1 Tea Spoon
  • Curry Leaves – 10
  • Hing – Pinch
  • Turmeric – 1/8 Tea Spoon
  • Make Powder of the following three items.
    • Red Chili Flakes – 1 Tea Spoon
    • Coriander Seeds – 1/4 Tea Spoon
    • Amchur – 1/8 Tea Spoon
  • Oil
  • Salt to Taste.

Method:

  1. Boil the Goruchhukudu for 15 minutes, drain and keep it aside
  2. Grind the Chana Dal  & toor Dal coarsely.
  3. In a heavy bottom pan, put 4 table spoons of Oil once the oil heats, put the tadka seeds, curry leaves and Hing. Add Chana Dal and Toor Dal and fry it for 10 minutes.
  4. Put the ChikkuduKayala pieces and Turmeric Powder and fry them for 10 minutes. Once this stuff looks brown, put the chili powder mix and saute it for couple of minutes.(Don’t burn the chili)
  5. Fry is done.

Tip: It goes very well with Rasam and white Rice.
