Mash Ki Roti

Ingredients:

  • Urad Dal – 1 Cup
  • Sona Masoori Rice – 1/4 Cup
  • Salt – to Taste
  • Oil – As required

Method:

  1. Soak Rice and Urad Dal for 1 Hour and grind it.
  2. Add salt and mix it well.
  3. Take a Skillet and put 1 Teaspoon of Oil and put the battered Flour as thick pancakes and put some more oil around the Pan Cakes.
  4. Put the lid on and cook till it looks golden brown and flip it to the other side.
  5. Let it cook for few more minutes until it looks brown. Remember, when you flip it, do not put the lid on to cook it.

Tips: Serve it with some hot chutney. Coconut chutney is a good combination.

Veggie Wrap

Required gadget: Panini Maker

Ingredients:

  • Tofu – 1 Cup
  • Capsicum – 1/2 cut into long lengths
  • Spinach leaves – raw – 20
  • Soy Sauce – 1/4 Teaspoon
  • Tortillas – 2 for making 2 Wraps
  • Red Chili Powder – 1/4 Tea Spoon
  • Onion – 1/4 Cup
  • Green Chilies Chutney – 1 Table Spoon
  • Salt to Taste
  • Pepper – to Taste
  • Oil  As required

Method:

  1. Cut the Tofu in long lengths and put this in a bowl along with Soy Sauce, a pinch of salt and red chilies powder and marinate this for 30 minutes
  2. Take a skillet and put 1 tablespoon of oil and saute Tofu till they become crispy and take them out and keep it aside.
  3. Now in the same pan, put the Capsicum and saute it for 2 minutes.(Don’t do it too much,  because we don’t want to loose the crunchiness.)
  4. Take the Tortilla and brush oil inner side of tortilla and start adding Spinach 10 leaves, Tofu, Capsicum, pepper, green chillie chutney and raw onion and fold it as wrap and brush oil on top of the wrap and put this in Panini maker. Do the same with the second Tortilla. Keep this one in as well.
  5. Grill it till it gets the golden brown grill marks on the wrap.

Flaked Rice(Atukula) Upma

When My Hubby came from work yesterday, he was hungry. We have few sweets at home, but he is not big fan of it.

He likes things more hot and Spicy. I got an idea and made this Flaked Rice Upma. It took less than 15 minutes and the out come was too good. He Really appreciated it very well.

I am sure, you are all going to love this.  This is ‘any time‘ snack. Enjoy it.

Ingredients:

  • Flaked Rice – 1 Cup
  • Onion – 1 medium size – Cut into small pieces
  • Green Chilies – 2
  • Curry Leaves – 10
  • Lime – 1/2 Piece
  • Tadka Seeds – 1 Tea Spoon
  • Tumeric Powder – 1/8 Tea Spoon
  • Salt to Taste
  • Oil – 5 Table Spoons 

Method:

  1. Sprinkle some water over the Rice flakes and toss everything to separate Rice flakes from forming lumps and keep it aside.
  2. In a heavy bottom pan, put 5 table spoons of oil. Once the oil is hot, put the tadka Seeds, then onion pieces, Chilies and curry leaves and saute them till the onion looks little brown.
  3. Add Salt, turmeric powder and flaked rice to the Pan and mix them very well till the rice look little fried
  4. Squeeze the lime juice into the mix and mix it well to spread the juice evenly.

Tip : Serve it Hot.

Shaki's Signature Dosa

Ingredients:

  • Urad Dal – 1 Cup
  • Sona Masuri Rice – 2 Cups
  • Paraboiled Rice – 1 Cup
  • Flaked Rice – 1/2 Cup
  • Fenugreek Seeds – 1/4 Tea Spoon

Method:

  1. Soak all the above ingredients in water for 6 hours.
  2. Grind it to fine batter.
  3. Leave the batter in the Dark place for couple of hours for ferment.
  4. Once it is fermented, keep it in fridge.
  5. Take out the Batter and Add Salt before making Dosas.

Tip: You can serve it with any chutney or Sambar.

Cracked Wheat Upma

Cracked Wheat Upma

Ingredients:

  • Cracked Wheat Soji – 1 Cup
  • Water – 2 Cups
  • Onion – 1 medium cut into small pieces
  • Green Chilies – 7 cut into long slits
  • Peanuts – 1/4 Cup
  • Tadka Seeds – 1 Table Spoon
  • Curry Leaves – 10
  • Coriander Leaves – Handful cut into very tiny pieces
  • Salt to Taste
  • Oil – 8 Table Spoons

Method:

  1. In a small pan put 2 cups of water and heat in a medium heat.
  2. In a heavy bottom pan put the oil. 
  3. Once the oil heats put the peanuts. Fry them for 2 minutes and put the tadka seeds.
  4. When the tadka seeds crackles, put onion, green chilies, curry leaves, coriander leaves and salt, saute this things for 5 minutes.
  5. Put the Soji and Saute these things for 5 more minutes and now pour the hot 2 cups of water.
  6. Slowly mixing into the soji stuff gently on a medium heat till the Soji absorbs the water completely at this point the Upma should look dry.
  7. Serve with any Chutney.

Semiya Toast

Semiya Toast

Ingredients:

  1. Semiya – 1 Cup
  2. Eggs – 4
  3. Whole Milk – 1/4 Cup
  4. Shallot – 2 Cut into Small pieces
  5. Green Chillies – 4
  6. Cilantro – Handful
  7. Ginger / Garlic Paste – 1/4 Tea Spoons
  8. Clove Powder – 1/8 Tea Spoon
  9. Salt & Pepper to Taste
  10. Red Chillies Powder – 1/4 Tea Spoon
  11. Hot Sauce – 1/4 Tea Spoon

Method:

  1. Boil the Semiya, Drain and keep it aside.
  2. In a bowl put the 2 to 11 items and mix it very well
  3. Now stir in the samiya gently and make them as omlet(like dosa) and put the lid on and turn after couple of minutes
  4. When the Omlet looks little brown it is ready

Tip: Serve it with hot ketchup

Toor Dosa(Kandi Dosa)

Kandi Dosa

To make 5 Dosas

Ingredients:

  1. Rice – Sona Masori – 1 Cup
  2. Toor Dal – 1/2 Cup
  3. Green Chillies – 5
  4. Dry Red Chillies – 2
  5. Fresh Ginger – 1/2 Inch
  6. Salt to Taste
  7. Oil to Fry

Method:

  1. Soak the first 5 ingredients for 4 hours and Grind.
  2. Add salt and make thick Dosas.
  3. Put the lid on while making the Dosas

Serve it with Sour Cream or Home made Curd

Bread Toast

Bread Toast

Ingredients:

  • Eggs – 4
  • Milk – 1 Cup
  • Green Chilly – 2 fresh finely chopped
  • Cilantro – 2 Table Spoons – Fresh finely chopped
  • Salt  to Taste
  • Pepper – 1/4 Tea Spoon Freshly Ground
  • Bread Slices – 6
  • Oil to Fry

Method:

  1. Break the eggs into a bowl and whisk together. Add milk little by little and whisk again.
  2. Add the Chillies, Cilantro, hot sauce, Salt and Pepper
  3. Cut the Bread Slices in diagonally and soak them one at a time in egg mixture
  4. Heat the oil in a griddle and fry the bread slices over a medium heat turning them until they are golden brown.
  5. Drain off any extra oil as you remove the toast and serve immediately.

Tip: Serve this with tomato ketchup. I am sure kids will ask you again & again for this. Have fun.

Pesarrattu – Moong Dosa

Ingredients:

  • Moong Dal – 1 Cup
  • Green Chillies – 5
  • Rice – 1/4 Cup
  • Zeera – 1/4 Tea Spoon
  • Zinger – 1/2 Inch
  • Salt to Taste

Method:

  1. Soak the first 5 items from the top for 2 hours and grind it finely.
  2. Put the salt as per your taste and then Make yummy Dosas.
